Though he’s always been healthy, Dr. Matheson took a longevity quiz about 15 years ago that turned his interest into a passion. This quiz pinpointed areas of your life you could change if you wanted to live longer and have a higher quality of life at the end of your years. The quiz told Dr. Matheson he should expect to live to be about 107 years old. That was a great incentive, so he began listening to podcasts on health and devouring all the latest research on nutrition.

The knowledge he gained made him decide to start spreading the word. Unlike what we’ve been told for years, salt, butter and animal fats weren’t the dietary ‘bad guys’! It was the sugar and high carbohydrate, processed foods that were killing people.

Scientists say we’re sicker and heavier than ever before. The reason? The food we eat and our lack of activity. When you eat poorly and don’t exercise, a high level of inflammation develops in your body. Inflammation is at the root of all chronic disease: cancer, heart disease, diabetes, arthritis and neurodegenerative disorders such as Alzheimer’s and Parkinson’s. You can make a dramatic difference in your health by simply reducing the amount of carbohydrates you eat each day, which causes inflammation.

When you concentrate on eating high fat foods, your body will store it to use as fuel rather than resorting to using the simple, refined carbohydrates that most people take in. Your body will train itself to burn the fat for fuel and you won’t need to eat as often, which is very liberating for most people.
